
Mark started making muffins every few days when his work schedule changed late last year. Instead of waking up at 4:30 am to get on the train, he’d wake up with the kids, start the coffee and bake muffins or pancakes. When the kids were with me every morning, breakfast would consist of a rotation of cereal, yogurt, or frozen waffles, with an occasional poached egg. Getting up at 6 am and making breakfast first thing in the morning is not my idea of fun, but Mark’s used to it and it comes naturally for him. This morning was all about using up the over-ripe bananas to make banana muffins. Claudine polished up 2 in one sitting.

It’s a gray, rainy morning in Brooklyn, so i thought a little colorful breakfast would be a nice way to start the day. Ok, Korean ricecakes (duk) may not be the most nutritious thing to eat first thing in the morning, but it sure is filling (glutinous rice!). I’m surprised that my kids take to the cakes as much as they do, but who can resist something so pretty? This one, at least, had beans and fruit (that counts as nutritious, right?).
Aside from rain, I’m feeling very overwhelmed at the moment. I stayed up till about 1:30 in the morning researching packaging and labels and started to panic a bit about the cost of everything. I know it costs money to start a business, but things seem to be piling up and I’m starting to wonder if it’s irresponsible to spend money on things like corrugated boxes and ribbon when we only have 1 working parent at the moment (me, but freelance) and bills to pay. We’re operating a bit on blind faith here…
