mixing spices

I opened my spice cabinet during my latest round of cookie baking and grabbed a jar of garam masala that I made a few months ago. Putting spices, herbs and other savory ingredients into sweets is nothing new and has always been a favorite trick of mine, so using garam masala in a cookie is hardly a stretch. It has all the warm spices that complement sweet flavors (cinnamon, cardamom, etc…), plus a few more savory ones that give it just a little extra kick. I ended up mixing a fresh batch as my older one was a bit too heavy on the black pepper, fenugreek and cumin. The cookies turned out pretty good - a crisp chocolate shortbread with a hint of garam masala and orange zest.
